As of 18th March 2020, our Chocolate Making Workshops and Scheduled Tours are postponed whilst the country deals with these extensive challenges. There is no fee attached to making a workshop reservation, payments will be taken either one week prior to the event or on the day of the event.
Chocolate Manufacturing from Cocoa to Couverture and Practical Applications
This 5 day workshop is ideal for those wanting to explore the professional side of chocolate production, from working with small scale recipes to semi-continual manufacturing processes. The program covers the basic principles from selection of raw materials through to the creation of white, milk and dark chocolate products as well as their effective applications. This is a great opportunity for those wanting to learn how to create their own chocolate for professional and industrial applications.
Create your own chocolate recipes with us, learning how to evaluate and select cocoa materials and chocolate making ingredients. The course will follow the development of chocolate flavour from the raw materials, through the roasting process, recipe development, refining and conching across a number of industrial equipment systems.
The course will explore further chocolate applications including tempering, enrobing, panning as well as flavour combinations, creation of bars, ganaches, desserts and decorations.
Participants from cocoa growing regions and communities are invited to bring their own cocoa material for use in the program.
During the program you will:
- Learn how chocolate is made from cocoa beans
- Learn how to evaluate and manage raw material qualities
- Explore the core principles of roasting, blending, refining and conching to transform cocoa into chocolate
- Learn how to make your own traditional chocolate truffles and ganache filled chocolates to your own recipes
- Learn a range of chocolate tempering techniques specifically for bean to bar recipes
- Prepare tempered chocolate for making truffles, chocolate bars and moulded chocolates and wider applications
- Work hands-on in our chocolate manufactory to translate development recipes into larger scale manufacturing systems
- Discover the chocolate manufacturing heritage of York and its role in development of chocolate familiar to us today
What will you take away with you?
Participants will take home approximately 10 kg of their own chocolate recipes together with a range of applications. Through the program there will be an opportunity to address specific manufacturing and processing tasks and techniques as most applicable for your production environment. This workshop will take place 9.30am - 5.00pm at our Chocolate Manufactory and Academy at York Cocoa Works.

We welcome chocolate enthusiasts of all ages, please note that we recommend that children under 13 years accompanied by a full paying adult participant
Learning Program Costs
The full cost of the Chocolate Manufacturing Learning Program is £1750 per participant, a deposit of £250 is required per participant to secure your place on the workshop. The final balance is payable 4 weeks prior to the start of the program. We welcome the opportunity to discus your learning requirements ahead of the program and are happy to tailor an individual session to address your needs.
Special Dietary Requirements:
It's important to us that everyone has a wonderful experience chocolate making, which is why we want to enable every chocolate lover to be able to have a go being creative. We are able to offer most chocolate making activities with dairy free and gluten free ingredients as long as we know in advance. If you have an individual with a nut allergy we have to say that the environment can not be guaranteed as nut free, we do however limit the presence of nuts in our workshop as much as possible, we are also able to provide new and sterile equipment for individuals with highly sensitive nut allergies. Please ask individuals or the parent or guardian of an attendee to contact us at least 48 hours ahead of the workshop so we can discuss with them how best to cater for their needs and ensure they can take part fully and enjoy the results of all their hard work.
